St. Patrick’s Day Leprechaun Cupcakes

Easy peasy lemon squeezy (but with no actual lemon, BTW) mini cupcakes to make for your favorite leprechauns!

Ingredients:

Cake mix in a box
Eggs, butter & water according to pkg
Frosting
Green food coloring
Cupcake liners
Lucky Charms cereal

Directions:

Make the cake batter according to the box’s directions.  If you are more talented / more adventurous / have more time than me and want to make it up from scratch, that would be even more fabulous!

Add green food coloring to batter until you get desired greenness.

Add baking cups to mini muffin pans & add batter.  Regular size cupcakes are great, too, but mini are more leprechaun size, plus the batter goes further if baking for a small army of leprechauns like I was.

Bake at 350 degrees Fahrenheit for approximately 20 minutes.  I used (4) pans in the oven at one time that held a dozen mini cupcakes each.

Mix green food coloring into frosting for desired greenness.  Mine was a completely different green than the cake mix and that is perfectly fine.  We love lots of shades of green on St. Patrick’s Day!

Top with Lucky Charms cereal.  I used the Limited Edition Lucky Charms (all clover marshmallows instead of the usual variety).

Repeat until you have the desired amount!
